Forsterkase is a classic “lumberjack’s” cheese from Canton Thurgau in Northern Switzerland. The wheels of Forsterkase are made from cow’s milk, washed in a white wine bath, and wrapped in fir bark.

i’m working on finding a source of raw goat’s milk so i can do what you’ve been doing….

We’ve been getting pasteurized goat milk from Summerhill Dairy. It’s $2.99/quart at Trader Joe’s. It makes for an expensive gallon, but in my opinion a half gallon makes more than enough goat cheese at a time (for home consumption).
