The Perfect Omelet
I cook with whatever I have on hand, so when I make an omelet, I fill it with whatever I have on hand. Sometimes my omelets are just “ok”. And sometimes I have bacon, green onions, sauteed mushrooms, and fresh goat cheese. Sometimes I have fresh thyme that I whisk in with the eggs. I will continue to fill my omelets with whatever I have on hand, as long as I have bacon, green onions, sauteed mushrooms, and fresh goat cheese.
That final scene in Big Night, brother making omelet for brother, that’s the perfect omelet scene. Though I’ve also watched the omelet scene in Hundred Foot Journey a few times. The omelet scene in Burnt, on the other hand, is bad.

Anton, I’ve never seen Big Night. Clearly I must. Also have not seen Burnt. Not sure I want to. Jackson, An Everlasting Meal is one of my favorite books. Long overdue for a re-read.
