Paella in a pan

New kitchen toy! A paella pan.

Procured from The Spanish Table in Mill Valley, a neat store with a location in Santa Fe which I strolled through last summer—before I had any clue what these large shallow pans were for.

And you’d think that in the middle of a major move I’d be trying to shed belongings. Ha!

what’s in the paella?

It’s kind of like a spanish jambalaya. Main ingredients are rice, saffron, and olive oil. Then usually chicken or seafood and chorizo are added along with red peppers and peas. We went the chicken/chorizo route and added artichokes.
